To start a whole BoB operation in a small military airport in El Palomar, Buenos Aires, Argentina in a matter of two weeks.
Given the nature of the airport and its location, there were no caterers working there, no warehouse infrastructure and the cost of hiring a remote caterer to do the BoB was too costly and due to the distances, very time inefficient.
Our team of experts had to work simultaneously to source a warehouse space from scratch airside to keep the inventory, pack the carts and deal with all the airport paperwork and permits. The experts had to train a team to run the daily packing operation, apply lean principles to arrange and run the warehouse, create a range that appealed to the demographic of JetSMART passengers, manage the supply chain from selection to delivery, train the crew, and manage costs, finances and taxes.

We had a successful go live with positive feedback from both the airline and passengers. They liked the services provided by the newly trained crew and the products offered onboard.
We were able to build a small airside warehouse, train a team to effectively run the operations, ensure the supply chain for all products and train all on board crew members. After a couple of months, we were able to source another warehouse landside to increase the operation and our menu range.
Doing this we avoided an annual cost of $250,000 USD for last mile catering services, established a happy airline and crew and most importantly, had satisfied passengers who enjoyed an enhanced onboard experience.
